Is everyone ready for Thanksgiving this year?? I swear, every year the holidays creep up quicker and quicker. I’m really not complaining as this is my favorite time of year, but this year it really blew my mind that we’re already nearing the end of November!
This is the first Thanksgiving I’m spending with my parents in a while now that they’ve moved back down to Oregon, and I. Am. Stoked! We contemplated keeping it really simple and ordering pizza or something like that so that we could spend more time playing games, but this is the one day out of the year where the holiday is based solely on dinner. And, who could say no to mashed potatoes and stuffing?? They are the best part of Thanksgiving, ya know. 🙂
Maybe we’ll keep Christmas dinner simple. One year my parents made enchiladas and I almost cried. It just felt so weird to not be having a traditional Christmas meal, but after 28 years I think I’m ready for a change in our traditions. Does anyone else do something completely untraditional but really easy for Christmas dinner? I definitely understand the appeal of not having a bunch of dishes and being able to spend more time with family instead of cooking.

Now, are you ready to make these delicious Maple Cinnamon Baked Pears?? Let’s dive into the recipe!
- 2 pears
- ½ cup rolled oats
- ¼ cup pecans, finely chopped
- 1 tablespoon melted coconut oil
- 2 tablespoons maple syrup
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- Pinch of salt
- 1 cup yogurt (plain or your favorite flavor!)
- Preheat oven to 350 degrees Fahrenheit.
- Cut pears in half and spoon out the seeds. Place pears skin down in 8x8 baking dish.
- In a medium sized bowl add oats, pecans, coconut oil, maple syrup, cinnamon, nutmeg and salt. Mix together until evenly distributed.
- Spoon even amounts of oat mixture into the center hole of each pear.
- Bake uncovered for 30 minutes.
- Drizzle with a little maple syrup if desired.
- Serve on top of yogurt, ice cream or whipped cream. Yum!
