Summer time is synonymous with many things: sun tans, BBQs, the beach, and my favorite – BERRIES! I love going to local farms and picking berries, making berry pies, salads and jams, but most of all, I love eating berries. How to Make Kale Taste Good
Are you immediately turned off by this recipe because it involves kale? Don’t be! Kale doesn’t have to taste bitter and disgusting. I did a whole blog post on how to make kale taste good, which you can check out here.
I kept this kale salad simple because the less time you spend slaving away in the kitchen on a hot summer day, the better. Am I right??
To get the kale prepped and ready to eat, you’re going to wanna start by tearing the kale leaves off of the stems and ripping or slicing the leaves into small pieces. Now let’s dive into making the kale taste good:
- Place bite size pieces of kale in large bowl.
- Squeeze 1/2 lemon onto kale leaves.
- Using washed hands (don’t be nasty), massage the lemon juice into the kale leaves until the leaves become tender. It only took me 1-2 minutes.
That’s it! Not so bad, right? I actually thought the kale tasted pretty good with just lemon juice. I also discovered I had a cut on my middle finger while I was massaging the lemon juice into the kale. Awesome.
I ate this Berry Kale Salad with and without this dressing, and really enjoyed it both ways. If you are easing into kale, I suggest adding dressing. This will take some pressure off of liking the natural flavors of kale.
I used my Green Goddess Dressing recipe, which takes just 5 minutes to make. The salad and dressing combined will take you a whopping 15 minutes, and no cooking required. I’m telling you, this salad is great for Summer!
Just Add Protein
My Green Goddess Dressing adds healthy fats and fiber to help keep you satiated, but to make this a more complete meal you’ll want to add a protein source:
- Soft-boiled eggs
- Grilled chicken

Before we jump into the recipe, can we just take a moment and admire this bowl?? The vibes this bowl is giving off is giving me life. Like, I want to lick this bowl…No, I want to BE this bowl. It’s just too dang gorgeous!
I found this bowl while shopping at Anthropologie on Mother’s Day. I probably stood there and stared at it for a good 5 minutes, contemplating whether I needed to spend that much money on a bowl. Who was I kidding? I would have paid a lot more for this beauty.
My sweet Grammy ended up offering to buy it for me. She could probably tell how much I was admiring this bowl, but her excuse was that she hadn’t bought anything for me in a while. I was like, dang, Grammy! It’s Mother’s Day. We should be showering you with gifts. But that’s what makes her such a great mom and grandma; she’s always thinking about others.
I’m not gonna lie, I felt like a real princess eating my kale salad out of this bowl. All I need to do now is go back and get a few more bowls to complete a set. That way I can eat from this bowl every day!
Berry Kale Salad
- 4 cups kale (I used Lacinato Kale)
- ½ lemon juice
- 1 persian cucumber
- ⅓ cup blueberries
- ⅓ cup raspberries
- 1 tablespoon hemp seeds
- *Green Goddess Dressing
- Wash kale leaves under water. Tear the leaves off of the stem and rip or cut into bite size pieces. Place in large bowl.
- Squeeze ½ lemon over kale and massage the lemon juice into the kale leaves until leaves are tender.
- Slice persian cucumber into thin circles and add to bowl.
- Add berries to bowl and sprinkle with hemp seeds.
- Leave as is or add Green Goddess Dressing.
